Découvrez une série de grands vins américains et australiens en très petite quantité malheureusement.
En Australie, retrouvez quelques domaines, dont certains au passé viticole de quatre ou cinq générations, qui sont entre les mains de véritables vignerons. La production moyenne de chaque vin ne dépasse que rarement les six cents caisses. Ces vignerons sont des passionnés avant tout, connaissant parfaitement leur terroir, travaillant le plus possible à la main, en bio et utilisant des barriques françaises. Voici ainsi la suite de notre offre de septembre dernier, avec les vins de Greenock Creek et Rusden, en Barossa, de Kilikanoon en Clare Valley, et Mollydooker et Shirvington en Mc Laren Vale.
Les vallées de la Napa et de Sonoma, au nord de la baie de San Francisco, constituent le cœur de l’Amérique viticole. Nous vous proposons de découvrir toute une sélection de wineries familiales avec les domaines Staglin, Diamond Creek, Philip Togni, Shafer et Kistler en Sonoma. Ces domaines réalisent de grandes cuvées, aussi bien sur des cépages bordelais que sur des chardonnays au profil très bourguignon. Nous vous proposons également de découvrir les vins vinifiés par Randy Ullom de la winery Kendall Jackson qui dispose d’une multitude de terroirs sur la côte californienne, et quelques bouteilles d’Opus One 2006.

« Drew Noon returned to McLaren Vale and purchased Noon’s from his parents (though father David still keeps an eye on things), having spent many years as a consultant oenologist and viticulturist in Vic, and thereafter as winemaker at Cassegrain. Some spectacular and unusual wines have followed. Low prices mean each year’s release sells out in 4 or 5 weeks, during which time the cellar door is open ; all wines are subject to quantity limits. »

« The Kalleske family has been growing and selling grapes on a mixed farming property at Greenock for over 100 years. Fifth-generation John and Lorraine Kalleske embarked on a trial vintage for a fraction of the grapes in 1999. It was an immediate success, and led to the construction of a small winery with son Troy Kalleske as winemaker. The vineyards, with an average age of 50 years, see no chemical fertilisers or pesticides ; some blocks are certified organic. The density of the flavour of the Shiraz and Grenache is awesome. Pirathon is the first wine to come from other growers, hence Pirathon Shiraz by Kalleske. Very definitely a winery to watch. »

« One of the greatest revelations of my Australian tasting this year was Kalleske. […] he appears to have a talent for turning out magnificently concentrated, full throttle reds that are indigenous to the top echelon of Southern Australian producers. « Spottswoode Vineyard is one of Napa’s most well-known landmarks, and its winemaking team, owner Beth Novack, and assistants Rosemary Cakebread and Jennifer Williams, represents a trifecta of talented young women. When the history of Napa’s great vineyards is written, the 40-acre Spottswoode Vineyard, tucked behind the quaint town of St. Helena, will be counted among the finest grand cru vineyards of the region. These wines have always been good, but over the last decade, the quality has soared, no doubt because of a much more strict selection in the vineyard as well as in the winery. A very fine second wine, Lyndenhurst, has also been introduced, which has increased the quality of the flagship offering, the Cabernet Sauvignon Estate. Like Bordeaux’s top chateaux, Spottswoode has gotten serious about turning out a very fine second wine that is softer and more accessible, yet represents their vineyard character. »

« Depuis une génération, Doug Shafer perfectionne dans son quartier de Stag’s Leap ce qui sera un jour classé grand cru de Californie. Toutes les composantes d’un grand cru sont réunies : constance de la qualité du raisin sur un terroir précis, liée à la qualité naturelle de son drainage et à un microclimat plus équilibré que dans la plupart des terroirs voisins, vinification avec prise de risques nécessaires à l’exaltation de l’originalité du terroir mais aussi précision et discipline permettant d’être fidèle au potentiel du raisin. Le terroir ici n’accentue pas les notes d’eucalyptus ou de menthe mais celles très classiques de cèdre, de graphite, de cassis de la même famille qu’au cœur du Médoc, avec simplement plus de corps, plus d’enveloppe et parfois aussi plus de lourdeur alcoolique. Le vieillissement sur une dizaine d’années affine la matière tout en élaguant les scories d’un boisé parfois encombrant et inutile. En revanche, la persistance en bouche n’appelle aucune réserve, c’est celle d’un très grand vin ! »

Kistler
Bettane & Desseauve, Les plus grands vins du monde :
« Peu de producteurs de Californie ont été aussi encensés que Steve Kistler, aussi bien par les journalistes spécialisés que par le public. Le secret de sa réussite tient d’abord à la simplicité et à la justesse des pratiques de vinification et de viticulture. Connaître et respecter les terroirs, les comprendre pour mieux les cultiver et mieux les vendanger, y compris (ce qui est si rare) dans la dimension liée aux qualités génétiques de chaque clone, vinifier avec le moins d’interventions possible mais avec la rigueur acquise au contact de Bill Bonetti, le génial précurseur des Kistler à Sonoma Cutrer. Ces vins très bien faits ont naturellement enthousiasmé le public californien par la générosité de leur constitution et le fait qu’ils n’étaient jamais surboisés ou dotés d’arômes technologiques. Nous avons certes un peu de mal en Europe à trouver dans leur bouquet la minéralité que les critiques américains leur attribuent mais à table, et sur place, nous avons souvent vérifié qu’ils s’accordent merveilleusement avec la splendide cuisine du comté de Sonoma. Une cuvée de prestige, Cathleen, issue d’une sélection des meilleurs raisins devrait être la meilleure introduction du domaine en France. »

« En 1978, Steve Kistler et sa famille ont fondé cette petite entreprise viticole dans les Mayacamas Mountains. La cave ultramoderne fut bâtie en 1992 sur la Russian River, juste à côté de Vine Hill Road. Depuis le début, Kistler Vineyard est mené par ses deux cerveaux, Steve Kistler, propriétaire-viticulteur, et son assistant, Marc Bixler. Autant dire que Kistler Vineyards est au sommet de la qualité californienne. Après chacune de mes visites, la qualité extraordinaire des vins élaborés par Steve et Marc m’oblige à rédiger un nouvel éloge. Tous les vins sont travaillés par petits lots (3 000 à 6 000 bouteilles) et embouteillés sans collage ni filtration. Le taux de SO² est maintenu au plus bas afin que le vin soit le plus expressif possible. Quant aux chardonnays, ils pourraient facilement passer pour de grands crus de bourgognes blancs car ils possèdent une incroyable minéralité liquide, une superbe structure et une pureté phénoménale. On peut dire que ces vins reflètent leurs terroirs. Tous sont soumis à une fermentation malolactique lente et complète, puis soutirés et transvasés dans des cuves de stockage avant d’être embouteillés sans filtration. Rien n’est jamais fait à la hâte. Au cours de la dernière décennie, j’ai évalué le potentiel de vieillissement des chardonnays. Ils atteignent leur apogée entre trois et cinq ans et s’y maintiennent huit à neuf ans avant de commencer à décliner. Si ce n’est pas très long selon les normes de nombreux bourgognes blancs, ça l’est pour un chardonnay de Californie. Je pense que la longévité ne doit pas se mesurer en capacité de survie, mais de bonification. »
Robert Parker’s Wine Advocate :
« The relatively cool growing season for 2007 Chardonnays produced tightly knit wines with very crisp acid profiles, superb concentration because of modest yields, and relatively long aging potential of probably up to a decade for most of these Chardonnays. If the scores seem slightly more conservative that in previous vintages, this probably reflects the vintage’s personality, which is more backward than the more evolved 2006s or fabulous 2005s, which have always shown brilliantly. Steve Kistler told me that in 2007, they only cropped 22 tons of Pinot Noir fruit from their 18 acres of Pinot vineyards. »
Philip Togni

« Philip Togni, figure légendaire de la vinification californienne, est sans doute le membre de la profession le moins enclin à la promotion personnelle. Ce producteur artisanal niché sur les flancs de coteaux escarpés de Spring Mountain, élabore des cabernets-sauvignons parmi les plus concentrés, les plus riches et les plus complexes de Californie. Plus je les déguste, plus j’admire ses prouesses. Le destin de Philip Togni était apparemment de créer un grand cabernet-sauvignon. Mais qui aurait pensé que cela se passerait sur Spring Mountain dans la Napa Valley ? Il a eu le privilège de recevoir l’enseignement d’Émile Peynaud à l’université de Bordeaux, où il obtint son diplôme national d’œnologue. Il affirme en plaisantant que c’est à Bordeaux qu’il a fait le plus gros de ses études en y apprenant toutes les idiosyncrasies et les préjugés locaux. Son parcours est impressionnant d’expériences accumulées en France, en Algérie, au Chili et, bien entendu, en Californie, avant qu’il lance sa propre marque avec son épouse Brigitta, en 1983. Lisa, leur charmante fille a été formée à l’européenne, avec participation aux vendanges et à la conduite de vigne. Il est évident qu’elle est bien placée pour prendre la relève si Philip Togni décide un jour que ces collines qu’il escalade avec la vivacité d’une chèvre deviennent trop escarpées. »

Diamond Creek

« Les cabernets cultes austères et étonnants du vignoble escarpé près de Calistoga portent le nom de leur parcelle : Gravelly Meadow, Volcanic Hill, Red Rock Terrace. Les vins vieillissent superbement. »
Bettane & Desseauve, Les plus grands vins du monde 2008 :
« Nous souhaitons qu’un jour une statue soit élevée à Calistoga en hommage à Al Brounsteil qui a planté ici les premières vignes en 1968. L’homme avait plus d’un demi-siècle d’avance sur les autres en faisant confiance d’abord à une nature sauvage et inconnue puis en la domptant et en la civilisant selon les règles les plus intelligentes de la viticulture historique européenne. Il faudrait un romancier pour raconter les aventures rocambolesques de l’arrivée du premier matériel végétal et les vinifications artisanales mais géniales des premiers millésimes en plein air avec un matériel de fortune, avec l’aide complice de Jerry Luper. Mais la nature a rendu au centuple ce qu’on lui a donné et délimité à quelques centaines de mètres de distance des trois vrais grands crus et trois fortes personnalités. Pour qui douterait de l’existence de vrais terroirs et vrais microclimats, la dégustation comparative de Volcanic Hill, terre chaude et volcanique, et de Gravelly Meadow, terroir froid, vendangé très tardivement, sera une révélation. »
Opus One

« Opus One est né d’une association entre le plus visionnaire des producteurs bordelais, Philippe de Rothschild, et du plus entreprenant des viticulteurs californiens, Robert Mondavi. Mettant leur savoir-faire et leur faire savoir (considérable !) en œuvre, ils ont voulu unir les talents complémentaires des deux continents. À l’origine, simple marque destinée à habiller les meilleures cuvées d’Oakville, le vin est devenu vin de château avec un vignoble propre, au cœur des meilleurs terroirs du village et une winery spectaculaire, chef-d’œuvre d’architecture et de fonctionnalité. Les œnologues de Mondavi et de Mouton-Rothschild ont travaillé en équipe pour définir le style du produit. Nous l’avons vu évoluer dès premiers millésimes de très forte carrure mais avec un alcool et un boisé saturants, aux millésimes des années 1990, très « grand luxe » mais un peu impersonnels, jusqu’aux trois dernières années où il se révèle avec beaucoup plus de nuances, de subtilités et confirme le statut d’Oakville comme terroir de Napa donnant un vin à la saveur la plus aristocratique, recréant des liens plus étroits avec les grands pauillacs, et faisant du rêve du vieux patriarche californien une réalité. »

« With a new winemaking team in place, and no longer any influence from the Mondavis, it is ironic that Opus One appears to have produced its greatest trilogy of vintages to date. This wine has always been more about sizzle than substance. While some top wines have emerged, others have been riddled with brett as well as lacking in concentration. That accusation can not be made against any of these three vintages. »

Depuis 1979, Christine et Dennis Canute conduisent leurs 40 hectares de vignes plantés sur un sol composé de sables et d’argiles rouges, au coeur de la vallée de Barossa. Ils sont désormais épaulés par leur fils Christian au niveau des vinifications. Ils produisent des vins aromatiques et complexes, équilibrés, aux tanins fins et soyeux. La cuvée Ripper Creek est issue d’un assemblage de cabernet-sauvignon et de syrah. Après des vendanges manuelles, le vin est vinifié en cuves ouvertes puis élevé 18 mois en barriques de chêne français de plusieurs vins.
Accédez au Ripper Creek 2007, une très jolie réussite, avec un vin fruité et fin, très élégant en bouche. Les tanins sont harmonieux et la finale présente une belle fraicheur. Ce vin pourra vieillir de longues années en cave et démontrer tout son potentiel dans une dizaine d’années.

« I drank a bottle of 1977 Yalumba Signature Cab/Shiraz the other day. The front label noted the source of the fruit being from Vine Vale. 30 years later I’m looking at the Rusden Cab/Shiraz, and being made in the same fashion, have aspirations that this wine will make the same mark in 30 years time- if there’s anyone patient enough to hang on to a bottle or two. The 2007 is a true Barossa Cab/Shiraz with classic fruit, sweetness and savoury undertones. Bring it on ! »

« The 2007 Ripper Creek Cabernet Sauvignon (60%)-Shiraz (40%) spent 18 months in well-seasoned French oak. Dark ruby-colored, it, too, offers a beautifully fragrant bouquet leaning toward the darker side of the spectrum. Scents of wild blueberry and blackberry essence lead to a remarkably elegant, glossy wine with deceiving depth and concentration. Succulent, complex, and long, it will drink well for a decade.»

C’est sur ce terroir sablonneux de la vallée de Barossa que le mourvèdre (alias le mataro en Australie) s’exprime le mieux en Australie. La cuvée Full Circle du domaine Rusden est une belle démonstration de toute la complexité de ce noble cépage. Elle est issue de leur terroir de sables et d’argiles rouges. Le vin, après être vinifié en cuves ouvertes, est élevé pendant 18 mois en barriques françaises.
Accédez au très joli millésime 2006, avec sa trame épicée et sa bouche bien marquée par le mourvèdre avec des tanins serrés, une matière puissante et une finale longue, dotée d'une belle fraicheur. À attendre patiemment en cave pendant 4 ou 5 ans et à déguster pendant 15 ans.

« The 2006 Full Circle Mataro was aged in some new as well as seasoned French oak. Dark ruby-colored, it has an enticing nose of wood smoke, spice box, underbrush, and blueberry. Not quite as expansive on the palate as the above wines, it is nevertheless a superb expression of this grape. Flavorful and lengthy in the finish, it will evolve for 2-3 years and deliver prime drinking from 2011 to 2018.»

Rusden Boundaries 2006

Voici la cuvée Boundaries, un 100 % cabernet-sauvignon issu de vignes âgées d’une vingtaine d’années. Les vignes sont plantées sur des sols composés de sables et d’argiles rouges dans la région de Vine Vale dans l’est de la Barossa Valley. Le vin est élevé trente mois en barriques dont 30 % de barriques neuves américaines et 70 % de vieilles barriques françaises.
Nous vous proposons d’accéder au millésime 2006, un vin élégant et mûr qui exprime très bien la typicité du cépage. Sa structure et son équilibre lui assurent un très bel avenir de plus de dix ans.

« This is a testament to how well our Cabernet stands up to adverse conditions. 06 was a tough year for anyone growing Cabernet. I decided to roll the dice and let it hang later than the Grenache because everything I’d seen in everyone else’s shed hadn’t quite developed yet. Thanks to the Nurse the Cab survived the wet end to the year and ripened slowly but elegantly into a very honest representation of Barossa Cab. It astounds me that the Boundaries show as much rich, forward fruit as this, from one of our coolest years. »

Rusden Chookshed 2006

Voici un autre vin de cépage du domaine Rusden, un 100 % zinfandel issu d’un vignoble âgé de trente à quarante ans. Les vignes sont également plantées dans la région de Vine Vale sur des sols sablonneux au sous-sol d’argiles rouges. Le vin est élevé pendant dix-huit mois en barriques neuves américaines (30 %) et françaises (70 %).
Très jeune, la cuvée Chookshed 2006 est encore sur la réserve, cependant le vin dévoile déjà toute la typicité de ce cépage avec une très belle complexité et un équilibre parfait. Très élégant, il demande néanmoins quelques années de garde pour patiner ses tanins.

« Well, I’ve always wanted to hold this one back in barrel for another year, and I made the decision that the 06, being more refined and complex, needed another year to come together. The wine is all the better for it. For me it’s still in your face, but balanced and has taken on the rum cigar finish from the extra time in the cellar. »

Voici la cuvée étendard de la famille Canute au domaine Rusden. Il s’agit d’un 100 % syrah en provenance d’une parcelle unique plantée en 1959, sur un terroir sablonneux et composé d’argiles rouges. Le vin est vinifié de manière naturelle en cuves ouvertes puis élevé 30 mois en barriques françaises et américaines, dont 35 % neuves. Le vin n’est pas filtré à la mise en bouteilles.
Accédez à cette superbe cuvée dans le millésime 2006, un vin élégant et racé, doté d’une grande complexité. Son potentiel de garde est excellent.

« Having the Black Guts in your cellar is like having Pharlap in your stable. It is an absolute honour to deliver this wine every year as it never falls short of fulfilling my expectations. It comes out fighting every year and never finishes second. »

« The 2006 Black Guts Shiraz competes favorably with its predecessors. The wine spent 30 months in 10% new American oak, 25% new French oak, and 65% old French barrels. Purple in color, it displays scents of cedar, lavender, incense, rosemary, smoked meat, and blueberry. Plush on the palate with a sense of elegance, this incredibly intense, savory, impeccably balanced Shiraz has layers of flavor, and is amazingly light on its feet. Drink it over the next 10-12 years.»

Le domaine Mollydooker a été crée en 2005 par deux passionnés, Sarah et Sparky Marquis. En seulement 2 ans, leurs vins de la Mc Laren Vale se sont imposés auprès de la presse internationale comme faisant partie des plus grands vins du monde. Les vins sont marqués par un fruit intense et précis ainsi qu’un toucher de bouche velouté et toujours équilibré.
Découvrez le style du domaine avec cette cuvée de syrah The Boxer, issus de 3 vignobles différents : McLaren Vale (26 %), Langhorne Creek (45 %) et Padthaway (29 %). Les vinifications s’effectuent de manière traditionnelle et par terroir. Le vin est élevé en barriques pendant quelques mois.
Accédez au Boxer 2007, un vin fruité, charnu et intense, avec une bouche dotée d’un bon volume, de tanins ronds et épicés. A déguster dès aujourd’hui et sur 5 ou 6 ans de plus.

Carnival of Love fait partie des fleurons du domaine. Il s’agit d’un 100% syrah provenant des vignobles de Gateway et Dry Creek. Chaque parcelle est vinifiée séparément, après un éraflage et un pressurage. La fermentation malolactique est effectuée, et l’élevage se déroule en barriques neuves.
En 2007, Sarah et Sparky Marquis ont une nouvelle fois réalisé une grande cuvée de Carnival of Love, complexe et intense avec une bouche harmonieuse et soyeuse. L’élevage est fin mais doit encore se fondre. Vous pourrez l’apprécier dans quelques années et sur 20 ans.

Nous vous proposons quelques bouteilles du millésime 2007, dans la cuvée Eclipse, assemblage de 2/3 de grenache provenant du domaine familial et d’1/3 de syrah. Le vin est élevé 18 mois en fûts dont 1/3 neuf).
Ce 2007 est un modèle de concentration avec un nez très intense et puissant sur les arômes de cassis, les notes torréfiées et épicées. La bouche est dense et riche, soutenue par une structure tannique mûre et élégante, prolongée par une finale de grande longueur. Très jeune aujourd’hui, ce vin s’appréciera après quelques années de garde ou un long carafage.

« This wine is very deep in colour. It has the beautiful aroma of small red berries, spice and hints of herb and tar - it is complex and attractive and just lovely to smell! The palate is powerful and packed with flavour. The 2007 tannins are evident and still quite youthful. This wine needs time and there is plenty of fruit to live on while we wait. It is very long in flavour and requires a strong food match and the anchovy and shaved Parmesan flavours on this occasion worked quite well. Optimum drinking time: Wait a bit, best 2012 to 2017. »

Summary : And I can remember when Alice’s was destined to be the "commercial" block, with slightly higher yields than the others, to present a more "drink now" wine which wouldn’t require quite so much cellar ! Pull the other one. This monster is a magnificent blacksmithed essence of shiraz from the ancient Yudnamuntana, which contains deposits dropped from floating glacial ice floes which were carried inland, far beyond the edge of deep ocean and our current shorelines. A rock fruit salad, in other words. Which may explain the confounding depth of this wine, which can be "drunk now", but not without risk. Its aromas, depending when you look, will contain all the above, and Bacchus only knows what else. The flavours are similarly astonishing and complex. The finish is as tannic as Yudnamutana dolomite, which is generally used for road metal, so should not wear out with undue haste. Ideally, I’d wait at least ten years. »

Summary : Unlike Alice’s, Roennfeldt’s, and Seven Acre, the Apricot Block grows mainly in recent alluvial sediments washed down from Roennfeldt’s Hopeless Hill to overlie the relatively recent clays of the creeklines. This is the most powerful and intense Apricot Block yet. While its alcohol is prominent and hot, it presents as a drink that could sensibly frighten the living hell out of you, which is what the vintage gave, and here it is, so let’s go. It glares at you. Are you coming, or what ? This looks nothing like a shiraz viognier blend, as some previous Apricots have appeared. This looks like a perfumed billet of iron from a foundry. It has a sexy dark chilli chocolate flavour, and yes, a touch of the old dried apricot, but there’s also a tonne of currants in here for you to chew. All wrapped in that deep, dark chocolate. And iron. And yet, once you’ve absorbed a mouthful, it soon seems to make nearly perfect gastronomic sense. Have it with a hot chilli cassoulet, of, say, boar’s neck and ox shin, and it tastes like a persistent lozenge of blackcurrant and pinker berries. Like a lolly. Some lolly. Start again in five years. »

Le Cabernet-Sauvignon 2006 possède un nez complexe, mélange de fruits noirs et de fruits secs avec des arômes de cassis, de figue et de datte. Aujourd’hui encore très jeune et un peu fermé, ce vin présente en bouche une liqueur délicate et enveloppante, avec un fruit mûr et des tanins charnus. Il demande quelques mois de garde supplémentaires pour s’épanouir. Ce vin pourra vieillir une quinzaine d’années en cave.

« Pretty herbage – Corsican mint and catnip, musk, marshmallow sugar, blackcurrant, blueberry, dried fruits : apple, fig, date, wet schist. Flavours : Christmas pudding, dry blackcurrant, mint, anthracite, spinach reduction, plenty of lignin. Texture : sinuous, lean, athletic, firm, ungiving, stiff acidity, schist/flagstone tannins. Aftertaste : very dry, very long, savoury, dried fig. Immediately after bottling, this wine was as wide open and dippy as a 2003 Bordeaux. That was when the great heatwave ripened everything and killed many French. A month later, it’s a tight, ungiving brute of a different order altogether. Sure, it has some pretty decorations in its bouquet, and there are some live fruits immediate, but the wine’s real power lies in the dried fruits that lie compressed and velvety below. These are flavours which will take many years to unfold. Another step down are the cellar essentials : firm acidity, and tannins of flagstone, reduced spinach and lignin. So while it’s your slightly awkward and tight youth so far, it will grow into something that might not actually kill Frenchmen, but it will certainly frighten many. Fifteen years should see it relax. » |

En 1997, la famille Shirvington se lance dans l’aventure viticole après l’acquisition de seize hectares de vignes sur les terres de Willunga, en Australie du sud. C’est aujourd’hui Kim Jackson qui dirige les vinifications et grâce à son talent, les vins de la propriété sont devenus de véritables références.
Voici la version cabernet-sauvignon, en provenance des terroirs de Willunga. Les méthodes de vinification et d’élevage s’effectuent uniquement en barriques dont 70 % neuves. Les barriques sont en majorité américaines (65 %).
Nous vous proposons quelques bouteilles du millésime 2006, un vin profond et épicé, doté d’une belle concentration et d’un équilibre remarquable. À mettre en cave absolument pendant quatre ou cinq ans et à déguster jusqu’en 2020.

« The wine has a deep maroon red colour. The varietal nose is an intense display of wild blackcurrant and dark cherry, intermingled with freshly ground cinnamon, crème brulee and a fresh leafy lift. The palate is vibrant with sweet fruit, developing into a fleshy, creamy mid palate. Fine savoury tannins built into the wine give it structure and persistence with a raw silk feel. The wine is drinking well now and will cellar for many years. »

En 2007, cette syrah est fortement marquée par la maturité du fruit, son éclat et sa fraîcheur. En bouche, le vin est généreux et élégant avec un fruit dynamique et une structure tannique serrée. Viticulteurs de père en fils, Troy Kalleske et son frère Tony, issus de la 6e génération, sont les premiers à produire et à mettre en bouteilles leurs propres vins. Dans la vallée de Barossa, ils cultivent (en biodynamie) 120 hectares composés de nombreux cépages internationaux et réalisent des vins intenses, fruités et bien équilibrés.
Voici le tout nouveau millésime de la cuvée de prestige de Troy Kalleske, Johann Georg. Produite à hauteur de 150 caisses seulement, elle est élaborée à partir de la parcelle la plus vieille du domaine, plantée en 1875. Sur ce terroir au sol sablonneux et au sous-sol composé de superbes argiles, les rendements sont minuscules. Après des vendanges manuelles, le vin est vinifié en petites cuves ouvertes. Il est ensuite transféré en fûts neufs américains et français où il termine sa fermentation avant d’être élevé durant deux ans.
Accédez au très beau 2007, avec un vin taillé pour la garde qui se révélera d’ici une bonne dizaine d’années.

« In colour, the wine is dark red. On the complex nose there are aromas of dark fruit, tar, roast meats and subtle spice. The palate is full-bodied and very complex with layers of flavour and a chewy texture. Tanins are prominent but well balanced and add a muscular structure to this wine. A long finish completes this intense, sophisticated and very classy old vine Shiraz. A superb wine that whilst drinks well upon release will ultimately benefit from a decade or more in the cellar. »

You think when you drink wine at 15% alcohol or more you are in for an ordeal. Not here. The heat is in the finish as a subtle warmth, covered in layers of great ripe dark fruit and choc/coffee. The spice and the chewiness are what gets you in this wine - not the normal jelly mouthfeel of big ripe wine, but a real chew. Length is intense and drying. Great wine, and I would love to see what it is like in twelve years. »

« The Kalleske family has grown biodynamic and organic fruit for years at its vineyard between Greenock and Kapunda; neatly boxed and royally packaged, this is its top drop. I think it is an example of a higher alcohol red that carries some reasonable balance of fruit, power and acidity. Very fine and slick, if ever so slightly hot, it has classic black tea tannins entwined in all those stewing plums and sooty wood. I think that in five to seven years this would have fallen into quite a regally seamless state of grace that would easily justify the big ask at the front. One for birthdays and blessings. »

Voici quelques bouteilles du troisième millésime de la cuvée Attunga 1865. Elle est produite à partir d’une des plus vieilles vignes encore en activité d’Australie, une vigne de syrah préphylloxera plantée en 1865. Cette syrah avait déjà conquis la presse internationale avec ses deux premiers millésimes, et vient confirmer ce succès avec le 2006.
Dans le millésime 2006, ce grand vin australien, dense, puissant et équilibré, exprimera toute sa complexité, grâce à l’âge de ses vignes, après de longues années de garde. Le vin se révélera alors profond, complexe et raffiné avec des arômes évolués et sauvages.

La winery Kendall Jackson est basée au cœur de la Sonoma Valley. Elle possède un patrimoine de vignes sur la côte californienne, de la Mendocino Valley jusqu’au comté de Santa Barbara en passant par les vallées de la Napa et de la Sonoma. Les vinifications s’effectuent séparément en barriques de chêne afin d’apporter de jolies notes grillées et de l’ampleur aux vins.
Découvrez le Vintner’s Reserve Chardonnay issu de différents vignobles appartenant à la famille Jackson. Les raisins proviennent en effet des comtés de Monterey, Santa Barbara et Mendocino. Après les vendanges, les raisins sont directement pressés puis placés en barriques pour les fermentations. Le vin est ensuite conservé dans ces barriques pendant cinq mois sur lies.
Sur le millésime 2007, découvrez un chardonnay très aromatique, avec un nez sur les fruits exotiques, la poire et des notes citronnées. En bouche, le vin est rond, avec une matière enveloppante et de la fraîcheur en finale. À déguster dès aujourd’hui et jusqu’en 2013.

Découvrez la cuvée de Zinfandel 2006 dans laquelle ont été assemblés 93 % de zinfandel, 4 % de barbera et 3 % d’autres cépages rouges (merlot, cabernet-sauvignon etc.). Les vinifications s’effectuent ici aussi séparément afin de mettre en valeur les caractéristiques de chaque cépage. L’assemblage se réalise juste avant la mise en bouteilles, après huit mois d’élevage en barriques.
Ce Zinfandel 2006 est un vin concentré et aromatique, sur les fruits mûrs avec des notes grillées. La bouche est charnue, avec des tanins épicés et une finale de bonne longueur. Vous pouvez apprécier ce vin dès aujourd’hui après une légère aération et pendant les cinq prochaines années.

Le domaine Kendall Jackson réalise un pinot noir en provenance de divers terroirs de la côte californienne (Monterey, Santa Barbara, Mendocino, Sonoma et Napa). En 2007, la winery a décidé de compléter cette cuvée par 8 % de petite syrah, syrah et zinfandel dans l’assemblage. Les vinifications s’effectuent séparément par cépage et terroir, puis sont suivies d’un élevage en barriques durant six mois. Les vins sont assemblés juste avant la mise en bouteilles.
Ce pinot noir californien possède une belle maturité de fruits, avec un nez sur les fruits rouges et noirs, avec des accents toastés. En bouche, le vin est ample, avec une structure dense et un élevage présent et bien intégré. À mettre en cave encore pendant quelques mois et à déguster jusqu’en 2015.

Voici le Highland Estates Hawkeye Cabernet-Sauvignon, en provenance des terroirs pentus et montagneux de l’Alexander Valley. Sur ces pentes, les sols sont peu profonds et composés de roches et de graves. Le vin a été élevé vingt et un mois en barriques françaises avec 70 % de bois neuf.
Ce 2005 est un vin complexe et racé, avec un nez profond de fruits noirs, d’épices et de notes torréfiées. La matière et les tanins sont mûrs et denses, avec un élevage marqué par des arômes grillés. Équilibré et long, ce vin peut tout aussi bien se déguster dès aujourd’hui que durant les sept prochaines années.

La famille Staglin s’est établie en 1982 au cœur de la Napa Valley sur le vignoble de Rutherford Bench. Sur ces terroirs cultivés en bio, se côtoient aussi bien du sangiovese, que du cabernet-sauvignon ou encore du chardonnay, avec en bonus une grande oliveraie de trois cents arbres.
Nous vous proposons de commencer par les seconds vins du domaine « Salus » nommés ainsi en l’honneur de la déesse romaine de la santé. La famille Staglin, connue pour sa générosité, redonne ainsi une partie des gains obtenus par la vente de cette gamme à des associations caritatives de santé. Il s’agit d’un chardonnay uniquement issu des vignes du domaine. La fermentation et l’élevage se déroulent en barriques, avec 65 % de bois neuf.
Accédez au millésime 2007 avec un vin plein de fruits, frais et tendu, réalisé dans le même esprit qu’un chablis. Équilibré, avec du volume en bouche, ce chardonnay se déguste dès aujourd’hui après un petit passage en carafe et durant les six prochaines années.

Voici la grande cuvée de chardonnay du domaine, en provenance de vignes cultivées en bio sur les collines de Rutherford. Les vinifications se déroulent en cuves tandis que l’élevage s’effectue en barriques de chêne dont 65 % de bois neuf et 35 % de barriques d’un à trois vins.
Ce chardonnay 2007 est élégant et fruité, il possède une bonne maturité et une expression minérale marquée. Complexe et raffinée, la bouche possède un gras délicat, soutenue par beaucoup de tension en finale. À déguster dès aujourd’hui et jusqu’en 2015.

This medium bodied wine displays wonderful balance on a flint driven palate of crisp Golden Delicious apples and fresh Key limes layered with lemon curd followed by a pleasant oak infused vanilla inflected finish. « Opening with a profuse nose reminiscent of a plum, blackberry compote spiced with anise, pencil shavings, freshly tilled soil and a whiff of menthol, the wine enters the palate with a salvo of Marasca cherries and black currants. It melts into a mid-palate rich with ripe plums, blackberries and five-spice macerated black cherries culminating in a finish of dark chocolate coated blueberries lengthened by supple, velvety, mouth coating tannins. This wine is drinking frightfully well now and should continue to do so for many more years to come. »

Voici le cabernet-sauvignon du domaine Staglin en provenance du vignoble situé juste au-dessus de la propriété. Les raisins ont été vendangés juste avant l’aube afin de conserver la fraîcheur du fruit. Les vinifications s’effectuent dans le plus grand respect du raisin, avec une fermentation malolactique et un élevage de 22 mois en barriques.
2006 est une belle année pour le cabernet-sauvignon dans la Napa Valley. Le nez est expressif et complexe, avec du fruit mêlé à de subtiles notes d’élevage. En bouche, le vin est profond, dense et doté de tanins mûrs et puissants, parfaitement équilibrés. Encore jeune, il demande quatre ou cinq ans de garde ou un bon passage en carafe pour s’apprécier pleinement. Il pourra évoluer jusqu’en 2020.

« The 2006 growing season was defined by a very wet winter rain season, a late budbreak, and despite the one colossal heatwave in mid-July, generally moderate temperatures throughout. These conditions provided ample hang time that allowed for even ripening, intense flavors and rich tannins that developed prior to and in conjunction with sugar accumulation resulting in wines of excellent extraction and exquisite balance. The wine opens with an abundant nose of candied cherries and ripe plums complex with notes of cedar and pencil shavings, a whiff of black olives and just the faintest hint of jasmine floating above. A lavish attack on the palate is lead by ripe Satsuma plums and marionberries in an ebullient bath of Maraschino liqueur followed by an uninhibited mid-palate of blackcurrants deepened by notes of leather, loam and rich chocolates that oscillate between milk and dark, girded along the way and through the exit into a lengthy finish by plentiful and luxurious tannins. Much like the 2006 Salus Cabernet Sauvignon, this wine is drinking delightfully well now but the ample structure should allow it to continue to develop for many decades to come. »

« Credit Staglin Family Vineyard for making a wine worthy of the $175 price tag in 2006 ; their '06 Estate Cab is complex and elegant, with healthy acidity that bodes well for the long term. It’s not easy to be impressive in this group, but the Staglin stood out from the first whiff… Complex and surprisingly mature already, with aromas of dark cherry, orange peel, cigar box and oak. Elegant on the palate with similar flavors ; more acidity than expected bodes well for the future. When I first smelled this I thought someone had snuck in a ringer -- an earlier vintage. But if it’s already this complex, I wonder what it will be like when it’s released in October. »

Mary Novak s’est installée avec ses filles en 1982 à Santa-Helena dans la région de la Napa. Cette équipe, principalement composée de femmes, gère d’une main de maître le domaine Spottwoode et s’est rapidement imposée parmi les très bons domaines de la vallée. Dans les vignes, les méthodes sont bio, et dans les chais, les vinifications sont précises avec une utilisation de bois neuf importante mais toujours intégrée.
Voici le millésime 2006 en provenance de vignes plantées sur des vignobles situés à l’ouest de Santa-Helena, sur des sols argilo-limoneux. Le vin est vinifié puis élevé sous bois pendant vingt-quatre mois avec 70 % de bois neuf.
Ce Cabernet-Sauvignon 2006 est encore aujourd’hui jeune et serré, avec un nez sur les fruits noirs, avec des notes d’épices et un côté terreux assez marqué. La bouche offre beaucoup de profondeur avec des tanins pleins et denses, du volume et une finale ferme. Le vin possède également de la fraîcheur, ce qui donne de l’équilibre. Ce vin californien doit absolument attendre quelques années en cave ; il pourra se déguster pendant une vingtaine d’années.

« The 2006 vintage is an « alive » and complex wine that is concentrated and contemplative. It is full of fruit now, though it’s easy to see that this wine has so much more to reveal. With a sturdy structure characteristic of this vintage, we opted for an additional three months of barrel ageing to encourage the flexible, supple nature of this resulting wine. A lovely, deep Cabernet Sauvignon that is luscious and fresh with youthful aromas of homemade blueberry pie and fresh-crushed brambly fruit. Black currant, espresso, ginger, almond spice and rose petals. Lively oak notes ; firm, yet supple tannins : terrific structure : a deep core of blue fruit. A textural delight — creamy and lovely, with great length. »

« The 2006 Cabernet Sauvignon, which has taken on much greater complexity and intensity since I tasted it right after bottling, is largely all Cabernet Sauvignon with just a small amount of Cabernet Franc in the blend. The owner’s daughter, Beth Novak, and her assistants, Rosemary Cakebread and Jennifer Williams, made an intelligent decision in bottling this wine later than normal to resolve some of the tannin issues, and they have certainly succeeded. This wine, which I believe will evolve for 25 or more years, has a gorgeous nose of violets, black currants, licorice, camphor, and a hint of graphite. Layered, rich, and full-bodied, the wine has an opaque purple color as well as wonderful purity and balance. It could be considered the wine world’s version of haute couture at a top address in Paris. It’s a beauty, perfectly balanced and as flawless and seamless as a 2006 Cabernet Sauvignon from Napa can be. Drink it over the next 25 years. »

« Deep ruby-red. Superripe aromas of black fruits, licorice, mocha and espresso ; not currently showing the classic floral character of this wine, despite the presence of 12 % cabernet franc. Big, broad, chewy and dry, with cassis and boysenberry fruit flavors currently in the background. Finishes quite tannic and a tad dry. This was bottled late, in December of '08, owing to its tannic structure and its tightness in barrel, according to winemaker Williams. (I once again scored the wonderfully fleshy yet suave 2005 estate cabernet 93 points. This wine may yet shut down in bottle but was smooth, sweet and captivating in March.) »

La Shafer Winery a été créée en 1972 par John Shafer. Cette petite propriété familiale s’est agrandie au fil du temps pour être aujourd’hui un bel exemple qualitatif de la Napa Valley.
Découvrez la cuvée Merlot, issue comme son nom l’indique d’une très grande majorité de merlot (76 %) complété de cabernet-sauvignon (17 %) et de cabernet franc (7 %). Les vignes sont situées sur les terroirs de Stags Leap District et Yountville. Le vin a été élevé vingt mois en barriques avec 40 % de bois neuf.
Accédez au Merlot 2006, un vin très intense avec un nez sur les fruits noirs et le cuir. En bouche, le vin est épicé avec des tanins souples et enveloppants et beaucoup de longueur en finale. À déguster dès aujourd’hui et pendant les dix prochaines années.

One Point Five symbolise la « génération et demi » qui travaille ensemble depuis vingt-sept ans au domaine, représentée par John et Doug Shafer. Il s’agit d’un assemblage de cabernet-sauvignon (98 %) et de petit verdot (2 %). Les vignes sont plantées sur Stag Leap District en provenance de deux parcelles, l’une située sur la colline surplombant le domaine, l’autre, nommée Bordeline, située au sud-est du vignoble. Le vin est élevé vingt mois en barriques à 75 % neuves, et 25 % d’un vin.
Découvrez le millésime 2004, savoureux et élégant avec beaucoup de finesse. La bouche est enveloppante avec un fruit mûr, de la minéralité et des tanins harmonieux. Voici une autre cuvée de chardonnay du domaine, en provenance d’une parcelle aux très faibles rendements issue des vignes de Lee Hudson, sur le vignoble de Carneros dans la région de la Napa Valley. Les méthodes de vinifications sont les mêmes pour tous les vins du domaine : en barriques dont 50 % neuves, pendant plus d’un an.
Le Chardonnay Hudson 2006 possède une trame aromatique fruitée, avec des notes exotiques et quelques touches boisées, finement intégrées. La bouche est riche, avec du volume et de la concentration, bien équilibrée par de la tension et de la minéralité en finale. À déguster dès aujourd’hui après une légère aération et pendant les sept prochaines années.

Voici le Vine Hill Vineyard Chardonnay, en provenance de parcelles plantées sur les collines de la Russian River Valley.
Ce chardonnay 2006 joue sur la complexité des arômes et la concentration en bouche. L’exposition des parcelles conjuguée à l’élevage sur lies apportent beaucoup de richesse, du gras et de la puissance. Ce blanc se termine sur une finale longue et tendue qui vient équilibrer l’ensemble. Le vin demande un long passage en carafe et pourra évoluer une dizaine d’années.

Philip Togni, anglais d’origine, a réalisé ses études d’œnologie à Montpellier et Bordeaux, et fut pendant trois ans en 1956, l’assistant d’Alexis Lichine. Après diverses expériences viticoles aux États-Unis, il décide de créer son propre domaine à la fin des années 1970, sur les terroirs pentus de Spring Mountain, dans la Napa Valley. Les vinifications se déroulent en fûts, avec une utilisation de bois neuf modérée.
Voici le Cabernet-Sauvignon de Philip Togni dans le millésime 2006. Taillé pour la garde, ce grand vin californien, complexe et élégant, pourra vieillir en cave pendant vingt ans.

« Bright medium ruby. Black fruits, dark chocolate, leather and earth on the slightly stunted but pure nose. Large-scaled and impressively concentrated, offering briary mountain berry flavors complicated by an exotic element of dark chocolate liqueur and nicely lifted by underlying minerality. This seriously deep, youthfully inky wine finishes with powerful building tannins and outstanding length. Even better than I suggested a year ago. "The tannins are strong, so this wine should be good in ten years," said Philip Togni, who feels that his 2005 is more approachable today. Incidentally, the Tognis have had their own bottling equipment from the very beginning-a rarity for a winery that releases just 2,000 cases in a good year. »

Voici en toute petite quantité quelques bouteilles du Cabernet-Sauvignon 2003, élevé 22 mois en fûts (25 % de bois neuf). Découvrez un vin au nez très complexe, sur les fruits noirs, les épices et des notes terreuses. En bouche, le vin est intense, riche avec du volume et une structure tannique ferme. Il commence tout doucement à s’ouvrir et à dévoiler ses subtilités s’il est aéré en carafe. Il pourra évidemment évoluer durant encore quinze ans.

« Not surprisingly, Togni’s 2003 Cabernet Sauvignon Estate has put on weight, and is performing even better out of bottle than it did from cask. Its inky/purple color is accompanied by classic aromas and flavors of creme de cassis, black currants, blackberries, dried herbs, smoke, barbecue spice, licorice, and tapenade. The wine is full-bodied, pure, and concentrated, with firmly structured tannin. While our culture prizes immediate gratification, these beauties require bottle age, and I rarely touch a Togni Cabernet Sauvignon before age 8 or 10. The 2003 requires another 7-8 years of cellaring, and should last for three decades or more. »

« Good medium ruby. Blackberry, cassis, roasted plum, chocolate, leather and some dusty earth on the nose ; seems less dense than the 2004. Then juicy and penetrating on the palate, with flavors of wild mountain blackberry, blueberry and leather. Shows slightly edgy acids and considerable dusty tannins that are not quite as fine as those of the young 2004, but there’s also a velvety texture to the middle palate. Togni noted that this wine is now typically about 82 % cabernet sauvignon, with about 15 % merlot, 2 % cabernet franc and 1 % petit verdot added since the '99 vintage. » |

Le domaine de Diamond Creek, implanté dans la Napa Valley, fut créé en 1968 par Al Brounstein. Le domaine dispose de cinq vignobles différents caractérisés par des microclimats et des sols spécifiques (volcaniques, graveleux et rocheux) qui donnent des vins très typés.
Accédez à la cuvée Gravelly Meadow, issue d’un vignoble de deux hectares plantés sur un sol de type rocheux et graveleux, particulièrement drainant. Il s’agit d’un assemblage de cabernet-sauvignon complété de merlot et de cabernet franc, vinifié en cuves puis élevé en barriques.
Le millésime 2006 a donné une cuvée Gravelly Meadow raffinée et très élégante avec beaucoup de concentration et de finesse. En bouche, le vin est pur et précis avec une matière veloutée et équilibrée. Ce grand vin doit vieillir en cave quelques années avant de développer toute sa complexité. Vous pourrez en profiter à partir de 2016.

« A fair bit off the pace set by its two handsome siblings and simply less wine than either, this rather tight-fisted wine seems a bit underfilled, and its slightly lower fruit is pushed aside by hard-charging oakiness. Voici le Red Rock Terrace, un assemblage de cépages bordelais à majorité de cabernet-sauvignon, en provenance du terroir éponyme, au sol teinté de rouge, très riche en fer. Ce vignoble, bien qu’exposé au nord, est l’un des plus chauds du domaine, il est réputé pour donner des vins accessibles plus rapidement.
Red Rock Terrace 2006 est un vin construit tout en élégance et en finesse avec une trame aromatique sur les fruits noirs, les notes toastées et cacaotées. En bouche, le vin est harmonieux, complexe, équilibré et long avec une maturité de fruit exemplaire. Il demande encore deux ou trois ans de garde avant de se déguster ; il pourra également évoluer plus d’une quinzaine d’années.

Enfin, retrouvez le Volcanic Hill issu également d’un assemblage bordelais à majorité de cabernet-sauvignon. Ce terroir, composé de roches volcaniques, est le plus important en termes de superficie mais également le plus chaud du domaine avec une exposition plein sud. Les vins issus de ce terroir sont connus pour leur magnifique évolution dans le temps.
Le Volcanic Hill 2006 est un vin tout en puissance qui reflète parfaitement son terroir avec un nez fumé, minéral, fruité et concentré. La bouche est terreuse avec de la densité, des tanins épicés et une grande longueur en finale. À mettre en cave pendant trois ou quatre ans de plus et à déguster durant plus de quinze ans.

« Competing for special honors with the Red Rock Terrace bottling in 2006, Volcanic Hill is similarly deep and well-filled with the solidity and focus that is the winery hallmark. It hints now at suppleness beneath its slightly gruff exterior, and, even if a touch grippy to finish, it avoids any acidy pitfalls, and it ends with an exceptionally long line of fruit. It is by small margin the most open of the Diamond Creek trio, but it still wants for patience to show its best face. »

Nous avons réussi à obtenir quelques bouteilles d’Opus One 2006, le célèbre vin californien de la Napa des familles Rothschild et Mondavi. Il s’agit d’un assemblage de cabernet-sauvignon (77 %), de merlot (12 %), de cabernet franc (5 %), de petit verdot (3 %) et de malbec (3 %) vinifiés en cuves puis élevés dix-sept mois en barriques.
Découvrez un très grand rouge de Californie, mûr, fruité, complexe, élégant et racé. Structuré, puissant et riche, ce vin doit impérativement séjourner en cave pendant une dizaine d’années afin de se patiner et gagner davantage en subtilité. Il pourra facilement évoluer pendant plus de vingt ans.

« The vintage of 2006 saw the lowest average maximum temperature in 25 growing seasons. A saturated black-purple, the 2006 Opus One shows aromas of fresh cut roses, licorice, dark chocolate, blackberry pie, smoked bacon and sassafras. Simultaneously silky and dense on the palate, this unfined wine offers flavors of cassis, espresso and zesty black cherry with a persistently smooth yet expansive finish. »

« (a five-variety Bordeaux blend based on 77 % cabernet sauvignon) Saturated deep ruby. Cassis, bitter chocolate and sexy smoky oak on the nose. Dense and sweet but firmly structured, with lovely inner-mouth aromatic quality giving the wine sappy lift. Pure, penetrating flavors of cassis, lead pencil and bitter chocolate, with a sexy oak quality that I can only describe as Mouton-like. This is still quite tightly wound and will need several years of bottle aging to soften up (it won’t be released until the fall of this year). "The biggest change here has been our independence," said winemaker Michael Silacci, who took over winemaking responsibilities with the 2004 vintage ; previously former partners Mouton-Rothschild and Robert Mondavi were involved in crafting this wine. »
